They are "spectral signatures" or how much of selected wavelengths of light or energy are being reflected or emitted. In this case I'm not sure which wavelengths have been selected, but it looks like a combination of visible light and some in the infra-red spectrum which will pick up stuff like chlorophyll content, moisture, and temperature. Anyway, the bright blue is snow or ice. I believe green and red are both types of vegetation (probably dry and wet vegetation respectively) - though some of the red might be bare rock. Urban areas come out a sort of dark pinkish color. The white cloud-like things are indeed clouds. The pink in the Kenai Fjords image I presume is ice, but I'm not sure why it's pink instead of blue - it may be partially submerged ice or something.
No, at work we're laying the groundwork for expanding the NRI to include Alaska. We're doing the survey design. Sadly I don't think they plan on sending me out there though. Data collection will be done by folks already in Alaska and is probably awhile away yet.
